Gordon M. Shepherd is Professor of Neuroscience at the Yale University Medical School. He is a former editor of Journal of Neurophysiology and Journal of Neuroscience. He has worked for many years on the physiology of the olfactory system, which stimulated him to analyze the role of retronasal smell in the perception of food flavor, which led him to explain how the brain creates flavor in Neurogastronomy, and the taste of wine in Neuroenology.
